chunky tomato vinagrette w/ suculent pork:idea:
tomato[big and plumpy]
olive oil, basil, white wine vinegar, sugar and thyme ^^
pork:
-olive oil, peach or any light color jams, and S&P[salt and pepper]

slice 5tomato in quarter, take off seeds, then rough chop the tomatoes to medium chunks.[set aside]
use 1/4 cup white wine vinegar, one cup of olive oil, 1/2cup of sugar [mix it in blender to make it think] add half of tomatoes the s&p to taste ^^ [texture will be bright oily red] then add the rest of tomatoes*do not blend it anymore*chop thyme and sprinkle it on the vinagrette

pork-mix all 1/2cup jam and 1/2 oil.....brush it on pork and S&P it
then grill, broil, bake, or fry it ^_^

serve it:

tomato vinagrette in the bottom, spinach around, lay pork on top of tomato, chop basil and sprinkle it on top ^_^

Pro cooking eh Jon? ^^ Sorry im not so into pork but my pallete's not bad i think it sounds pretty nice all together =d
